Ingredients:

  • 1 large head cauliflower, cut into florets

  • 1 head broccoli, cut into florets

  • 4 cups vegetable broth

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1/2 teaspoon cumin

  • 1/4 teaspoon coriander

  • Juice of 1 lemon

  • Fresh cilantro, for garnish

  • Salt and pepper to taste

Instructions:

  1. Sauté the Aromatics: In a large pot, sauté the onion and garlic in a bit of ghee (optional) until softened.

  2. Add Vegetables and Broth: Stir in the cumin and coriander, cooking for a few seconds until fragrant. Add the cauliflower and broccoli florets, then pour in the vegetable broth.

  3. Simmer: Bring to a boil, then reduce heat and simmer until the vegetables are tender.

  4. Blend and Season: Let the soup cool slightly before blending until smooth. Stir in lemon juice. Season with salt and pepper to taste.
